You often see it in recipes - a cup of fish stock. As simple as it may sound, this is the basis of many a delicious dishes from bouillabaisse through to chowder and soups. But where do you get fish stock? You can't buy fish stock cubes as you can with beef or chicken.

I agree fish stock cubes are harder to come by than I, and most of my colleagues would like. Might i suggest that you go to a larger supermarket or a "cash 'n' carry" and base your search around the stocks and sauces area. I found a particularly nice fish stock cube produced by K-nor they've got the k-now how, which i used in a goan masala. Tastey.

You can make up a decent pot of fish stock from scratch - and it can be frozen for later use when needed. Ideally you should use white fleshed fish skeletons and heads rather than strong and oily fish, as the basis for the stock.
Wash the fish heads or skeletons, then boil em up in a saucepan with bay leafs or something and a bit of seasoning. Remove the scales n bones and that and hey presto..
